Veg Paneer Pulao

Ingredients:

For the Rice:

1 cup Amara Basmati rice (rinsed and soaked for 30 minutes)
2 cups water
Salt to taste
For the Paneer and Vegetables:

200g paneer (cubed)
1 cup mixed vegetables (carrots, peas, bell peppers)
1 large onion (finely sliced)
2 tomatoes (chopped)
2-3 green chilies (slit lengthwise, adjust to your spice preference)
1/2 cup yogurt
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to your spice preference)
1 teaspoon cumin seeds
1 cinnamon stick
3-4 green cardamom pods
3-4 cloves
2 bay leaves
2 tablespoons ghee (clarified butter)
2 tablespoons oil
Salt to taste
Fresh coriander leaves for garnish
