Vegetable Biryani
Ingredients:
1 cup Amara Basmati rice
2 cups water for cooking rice
2 tablespoons ghee or oil
1 large onion, thinly sliced
1 large carrot, diced
1 cup green beans, chopped
1 cup green peas
1 bell pepper, diced (optional)
1/2 cup cauliflower florets
1/2 cup paneer cubes (optional)
1/4 cup yogurt
2 tomatoes, chopped
2-3 cloves garlic, minced
1-inch piece of ginger, minced
2-3 green chilies, slit
Biryani spice mix (1 teaspoon each of cumin seeds, coriander powder, garam masala, turmeric, and red chili powder)
1/2 teaspoon saffron threads (soaked in 2 tablespoons of warm milk)
A handful of fresh mint leaves
A handful of fresh coriander leaves
Salt to taste
Cashew nuts and raisins for garnish (optional)
