
Chicken Biryani
Ingredients:
For Marinating the Chicken:
500g chicken, cut into pieces
1 cup yogurt
1 tablespoon ginger-garlic paste
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1 teaspoon garam masala
Salt to taste
For the Rice:
2 cups Amara Basmati Rice, soaked for 30 minutes and drained
Water for cooking rice
2-3 green cardamom pods
2-3 cloves
1 bay leaf
Salt to taste
For the Biryani:
3 tablespoons ghee or vegetable oil
2 large onions, thinly sliced
2-3 green chilies, slit (adjust to taste)
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1 cinnamon stick
2-3 green cardamom pods
2-3 cloves
1 bay leaf
1/2 cup chopped tomatoes
1/2 cup chopped coriander leaves
1/2 cup chopped mint leaves
A pinch of saffron strands soaked in 2 tablespoons warm milk
1/4 cup fried onions (for garnish, optional)
Salt to taste
